Since we're being overrun by the bounty of our community garden, I had to start searching for new recipes. Zucchini is a perennial overachiever -- and this has been one of our best years ever. I've tried a couple different zuke bread recipes and this one is a keeper. The bread is moist and, after I reduced the amount of sugar (using 1-1/2 cups instead of 2-1/4), not too sweet. Substituting whole wheat flour for half of the all-purpose makes me think it's even healthy (ha ha).
It looks like the zuke plants are getting their second wind.....so there will be more coming.
