Goldilocks and Her Garden

The good news? Our community garden plot has resulted in a never-before (to us) seen bounty of produce.

The bad news? Our community garden plot has resulted in a never-before (to us) seen bounty of produce. We may have to resort to midnight zucchini drops at our neighbors' doors.

So I've been making pickles (from the cucumbers, not the zukes). Somewhat like Goldilocks. The first batch was too sweet (1:1 vinegar to sugar ratio).

The second batch was not sweet enough (2:1 vinegar to sugar ratio).

Hopefully, the next batch will be just right (I'm going for a 3:2 ratio). By my estimates, it takes about three pickling cucumbers to make a pint of bread and butter pickles (plus some onion slices). There are a lot more pints of pickles on those vines.

As for the zukes? We used this recipe last night -- very tasty.
